Swedish Apple Pie

Ingredients:

4 -5 medium apples (peeled, cored, and sliced)
1 1/4 cups sugar (divided)
3 teaspoons cinnamon
3/4 cup butter or 3/4 cup margarine
1 cup flour
1 egg

Directions:

1 Preheat oven to 350.
2 Fill pie pan 3/4 full with apples.
3 Mix 1/4 cup sugar and 3 tsp cinnamon.
4 Sprinkle over apples.
5 In saucepan, melt butter and remove from heat.
6 Add remaining ingredients (including the 1 cup of sugar remaining).
7 Pour evenly over the apples in pan.
8 Bake 45 minutes.

 

Swedish Pancakes (Pannkakor)

Ingredients:

2 eggs
1 1/4 cups plain wheat flour (not self-raising)
2 1/2 cups milk
1 teaspoon salt
butter (for frying)

Directions:

1 Mix eggs, flour and salt.
2 Add the milk, a little at the time, and whisk to a smooth batter. The batter will be very thin (almost like for crêpes).
3 In a hot skillet (preferably cast-iron), add one teaspoon butter and just as much batter to cover the bottom (turn the skillet around to spread the batter). Fry the pancakes golden brown on both sides. Add more butter for each new pancake.
4 Roll or stack them on a serving plate. Keep warm.
5 Serve hot, preferably with whipped cream and jam.
6 (Leftovers can be reheated or served cold with the same accessories).

Swedish Turkey Meatballs

Ingredients:

2 lbs ground turkey (7% lean)
1 egg
3/4 cup breadcrumbs
1 teaspoon salt
1/2 cup milk
2 teaspoons lemon pepper seasoning
1 teaspoon paprika
1/2 teaspoon nutmeg
2 tablespoons chopped parsley
1 tablespoon onion flakes
2 cans chicken broth
2 -3 cups home made white sauce

Directions:

1 Combine the first ten ingredients and shape into 1 1/2" meatballs.
2 In a large non-stick Dutch oven, brown meatballs in 1 tbsp of butter, turning carefully every few minutes to brown all sides, maintaining meatball shape.
3 Add chicken broth and simmer for 15 minutes.
4 Add white sauce.
5 (Note: I have used cream gravy or 2 cans cream soup such as mushroom or chicken to substitute for the white sauce. Both options work very well.) Stir, heat and serve over hot cooked egg noodles.
