Harvard Beets for the Freezer (or Right Away)

Ingredients:

1/2 cup sugar
1 1/2 teaspoons cornstarch
1/4 cup cider vinegar
1/4 cup water
3 cups beets, cooked and cubed
2 tablespoons butter

Directions:

1 Mix the sugar, cornstarch, vinegar and water in a pot and boil 5 minutes, stirring often.
2 Add the beets, toss to coat.
3 If you are freezing: put one batch in a quart size bag or container, and make a note to add 2 tablespoons butter when reheating.
4 If you are eating them now: Let stand for at least 30 minutes.
5 Just before serving, add the butter and reheat to the boiling point.

 

Swedish Pickled Beets

Ingredients:

1/2 cup cider vinegar (or white vinegar)
1/2 cup water
1/4 cup sugar
1 teaspoon salt
1/8 teaspoon fresh ground pepper
2 cups beets, thinly sliced, cooked and peeled

Directions:

1 Combine vinegar, water, sugar, salt and pepper.
2 Bring to a boil; cool. Place beets in a deep bowl and pour dressing over them.
3 Let stand at least 12 hours before serving.
4 Serve with fried fish, hot and cold meats or on a smörgasbord. Enjoy!

 

Swedish Meatballs

Ingredients:

MEATBALLS

1 lb ground beef
2/3 cup milk
1/2 cup breadcrumbs
1 egg
1 teaspoon onion powder
1 teaspoon salt
1/4 teaspoon nutmeg
pepper

FOR THE SAUCE

1 (10 3/4 ounce) can condensed cream of mushroom soup
1/2 cup sour cream
1/2 cup milk

Directions:

1 TO MAKE THE MEATBALLS:.
2 Preheat oven to 400ºF.
3 Mix all ingredients for the meatballs together. Shape into balls. Place on cookie sheet.
4 Bake for 10 minutes or until browned.
5 Remove meatballs from oven and place in a casserole dish.
6 Turn oven temperature to 350ºF.

7 TO MAKE THE SAUCE:.
8 Stir together ingredients for the sauce and combine with the meatballs in the casserole.
9 Bake, covered, for 1 hour.
10 Let stand covered for 10 minutes before serving.

 

Swedish Apple Pie

Ingredients:

3 1/2 cups sliced apples (I use Granny Smith)
2 tablespoons flour
3/4 cup granulated sugar
1 pinch salt
1 egg
1 teaspoon vanilla extract
1/2 cup sour cream
1 (10 inch) unbaked pie shells

Topping

1/3 cup sugar
1/3 cup flour
1 teaspoon ground cinnamon
1/2 cup softened butter

Directions:

1 Boil apples just until beginning to soften; drain well.
2 Preheat oven to 350°F.
3 Mix drained apples, flour, sugar and salt Beat eggs and vanilla together and add to apple mixture.
4 Fold in sour cream.
5 Pour into pie shell and bake approx.40 minutes or until set.
6 While pie is baking, prepare topping as follows:.
7 Combine sugar, flour, ground cinnamon and softened butter until mixture resembles coarse crumbs.
8 Remove pie from oven and sprinkle on topping.
9 Bake for an additional 15 minutes.
10 Cool.

Swedish Meatballs With Lingonberry or Cranberry Sauce

Ingredients:

Lingonberry or Cranberry Sauce

500 g lingonberries or 500 g cranberries
1 lemon, juice and zest of, finely grated
150 g caster sugar

Swedish Meatballs

50 g butter
1 onion, peeled and very finely diced
2 teaspoons allspice
100 g fresh brown breadcrumbs
150 ml milk
1/2 kg fresh minced beef
1/2 kg fresh ground pork
1 egg, beaten
salt
pepper
2 tablespoons sunflower oil
2 tablespoons flour
400 ml beef stock
200 g sour cream or 200 g creme fraiche
4 tablespoons finely chopped fresh dill

Directions:

1 To make the sauce, put the lingonberries or cranberries into a heavy bottomed saucepan with about 100 to 120 mls of water, the lemon juice and zest & bring to the boil.
2 Then turn the heat down to a gentle simmer and cook for 10 to 15 minutes. As soon as the berries have started to burst - add the caster sugar and cook until the sugar has completely dissolved. Take off the heat and allow to cool. Check for sweetness, if it is too sour, add more sugar to taste and cook until dissolved.
3 To make the meatballs, first melt a little of the butter in a frying pan and add the finely chopped onion - sauté until soft & then add the allspice.
4 Soak the breadcrumbs in the milk - until the milk has been absorbed, about 30 to 45 minutes. Mix the fried onion in with the soaked bread and then add the meat and beaten egg, season and mix well.
5 Dampen your hands and form the mixture into balls about the size of large walnuts.
6 Heat half of the remaining butter with half of the oil and fry the meatballs in batches - until they are golden brown in colour and hold their shape.
7 Allow to meatballs to cool slightly.
8 Heat up the remaining butter and oil in the pan and add the flour - cooking over a low heat until the flour is golden and sandy in appearance (like a roux base).

Cream Sauce for Swedish Meatballs

Ingredients:

1/8 pint cream
1/4 pint beef stock
1/2 tablespoon soy sauce, to taste
1 tablespoon white flour
1 tablespoon water
salt
white pepper

Directions:

1 Swirl out the pan with boiling beef stock.
2 Add the cream.
3 Add the flour mixed with approx 1 tablepoons of water.
4 Add the seasonings.
5 Simmer until the sauce thickens.
6 Serve with Swedish meatballs.

Amazing Solan Family Chocolate Cake

Ingredients:

3 cups flour
2 cups sugar
2 teaspoons baking soda
1 teaspoon salt
6 tablespoons baking cocoa
3/4 cup oil
2 cups cold water
2 tablespoons white vinegar
1 tablespoon vanilla

Mocha Glaze

1/2 cup powdered sugar (optional)
2 tablespoons baking cocoa (optional)
1/2 teaspoon decaf instant coffee (optional)
1 -1 1/2 tablespoon milk, of choice (works with regular, soy or rice or whatever) (optional)
1/4 teaspoon almond extract (I usually use almond, but have tried & like coconut, orig. glaze recipe calls for peppermint) (optional) 
 
Directions:

1 Instructions for Cake:.
2 Mix dry ingredients together in large bowl.
3 Mix wet ingredients together in separate bowl.
4 Add wet to dry a little at a time, stirring as you add.
5 Pour batter into WELL-GREASED bundt cake pan (well-greased is key--this is a sticky cake; I use Pam with great results), bake at 350 for 35-40 minute.
6 Serving suggestions: with fresh whipped cream& strawberries, or drizzle with warm caramel or Kahlua, or glaze with mocha glaze (or some combo thereof!).
7 Instructions for Glaze:.
8 Mix dry ingredients together in bowl.
9 Dissolve coffee in 1 tablespoon of milk; add extract.
10 Whisk coffee liquid into dry ingredients; whisk until all blended and if needed, add 1/2 tablespoon more milk.
11 USE GLAZE IMMEDIATELY OVER CAKE. It will harden quickly.

Swedish Apple Pie

Ingredients:

4 -5 medium apples (peeled, cored, and sliced)
1 1/4 cups sugar (divided)
3 teaspoons cinnamon
3/4 cup butter or 3/4 cup margarine
1 cup flour
1 egg

Directions:

1 Preheat oven to 350.
2 Fill pie pan 3/4 full with apples.
3 Mix 1/4 cup sugar and 3 tsp cinnamon.
4 Sprinkle over apples.
5 In saucepan, melt butter and remove from heat.
6 Add remaining ingredients (including the 1 cup of sugar remaining).
7 Pour evenly over the apples in pan.
8 Bake 45 minutes.

 

Swedish Pancakes (Pannkakor)

Ingredients:

2 eggs
1 1/4 cups plain wheat flour (not self-raising)
2 1/2 cups milk
1 teaspoon salt
butter (for frying)

Directions:

1 Mix eggs, flour and salt.
2 Add the milk, a little at the time, and whisk to a smooth batter. The batter will be very thin (almost like for crêpes).
3 In a hot skillet (preferably cast-iron), add one teaspoon butter and just as much batter to cover the bottom (turn the skillet around to spread the batter). Fry the pancakes golden brown on both sides. Add more butter for each new pancake.
4 Roll or stack them on a serving plate. Keep warm.
5 Serve hot, preferably with whipped cream and jam.
6 (Leftovers can be reheated or served cold with the same accessories).

Swedish Turkey Meatballs

Ingredients:

2 lbs ground turkey (7% lean)
1 egg
3/4 cup breadcrumbs
1 teaspoon salt
1/2 cup milk
2 teaspoons lemon pepper seasoning
1 teaspoon paprika
1/2 teaspoon nutmeg
2 tablespoons chopped parsley
1 tablespoon onion flakes
2 cans chicken broth
2 -3 cups home made white sauce

Directions:

1 Combine the first ten ingredients and shape into 1 1/2" meatballs.
2 In a large non-stick Dutch oven, brown meatballs in 1 tbsp of butter, turning carefully every few minutes to brown all sides, maintaining meatball shape.
3 Add chicken broth and simmer for 15 minutes.
4 Add white sauce.
5 (Note: I have used cream gravy or 2 cans cream soup such as mushroom or chicken to substitute for the white sauce. Both options work very well.) Stir, heat and serve over hot cooked egg noodles.
